Skirt Steak
An extremely flavorful cut on it’s own but can also hold a marinade well. We have both the outside and inside shirt steak to choose from. The outside skirt steak is longer and more narrow than the inside skirt and comes from the diaphragm which leaves the cut quite tender. Both have a robust flavour but outside skirt has a deeper minerality, due to the proximity to the liver, like the hanger.
