Picanha (1 or 2 steaks depending on size, 1 lb avg)
Picanha is an incredible cut of meat from the back end of the beef sitting on top of the sirloin with a wonderful fat cap. In close proximity to hard working muscles in the round, the Picanha cut develops great flavor, but be sure not to over cook it. Picanha steaks are popular in Brazil while typically less known in the US. Roast it up or grill it, then slice and top with chimichurri.
