We love recommending bavette, also known as faux hanger or flap steak. From the bottom sirloin, this cut clocks in at double the weight of skirt steak, and takes well to marinades, grilling, and other high heat, fast cooking methods. In France, bavette is commonly used for steak frites, but the cut is not as well-known in the US.
